Trying out a sort of Vegan way of eating.
I know, I know, a few years ago I was so ridged in my thinking that trying out eating Vegan would have made me roll my eyes, and want to eat a brisket just to prove I was right.
I’m trying to ease up in my ridged thoughts, and trying to actually listen to my body. The truth is, I feel like crap most of the time. I’m sore, I’m tired, and I’m mostly sick of feeling that way, so I thought, why not gently try and love myself through foods that hopefully help me feel less of that.
Coming from eating disorders, and a life consumed with constant diets and shame about what I’m eating, this feels like a pretty foreign concept to me, but I’m willing to give it a try. Another step towards learning to love myself.
With this will come grace, I’m not going to fret if I “mess up” and If I’m really craving a burger, I might just go ahead and have it. So I’m not going to call myself anything for fear of offending people, but I am going to do my best to eat what feels good, no counting calories, and reminding myself that shame never leads to a lifelong change.
All that to say, I asked on instagram and got a pile of recipes from people, and you all seem genuinely interested in people’s responses, so I’m going to pile them together here for you. I may add and change this blog post from time to time. I will let you know in my instagram stories when I do.
Happy coconut milk and beans my friends.
